Little Letters

Dear Work, thank you for letting me make some money, but, will you please give me more? There are a lot of things that I want, but I can't quite afford them yet. Sincerely, The poor college student who wants a Wii and also wants to go on vacation.

Dear Time, Will you please go by faster? I'm ready for my weekend to start. Sincerely, The girl who is watching the clock.

Dear Food, Get in my belly, I'm hungry. Love, Katie

Dear Laundry, We meet again. Why is there always so darn much of you to do? I just don't understand how you pile up so fast. Sincerely, One of the people who dirties the clothes.

Dear School, I think it's time for another long weekend, can you work something out for me? Let me know ASAP. Sincerely, The girl suffering from senioritis (already).

Dear Running, I should probably visit you more often. Since the half marathon our relationship has seriously dwindled. If I'm going to do another half in June we should probably re-kindle our relationship. I hate to say it, but, I kind of miss you. Love, The girl pretending to be a runner.

Dear Dr. Mario, Can we please play again? I think you're fun. Plus, a little (or a lot) of competition is healthy, right? I just want to beat Kelli and my Dad again. Those are my favorite games. The ones against Shawn are pretty fun to though. I hope to see you soon! Love, The girl who is addicted.

Dear Tyler, Thank you letting me get a coke a few times this week. I know it's naughty, and I'm probably drinking too much. I'll try to get better. Oh yeah, thanks for playing tennis with me last night! I really enjoyed it, even though you can hit the ball really hard and I sometimes most of the times can't get to it, but thank you for being patient with me when I'm being a dork on the court. I love you. Love, Sweetie.

White Cheddar and Broccoli Mac & Cheese

This is one of the images responsible for my finding-and-trying some new recipes. This particular recipe just sounded really really delicious, and really really easy. So I decided to go ahead and try it. The recipe can be found here.

Last Friday (exactly a week ago), Tyler and I decided that we wanted to try and make this delicious-looking mac & cheese. Now, if any of you know me, you know that I don't love macaroni and cheese, but about once or twice a year I decide that it "sounds good" so I'll have some. I'm usually pretty disappointed whenever I try it too. That night we went to the store and bought some groceries, we were sure to include all of the ingredients for the recipe on our trusty shopping list.

On Saturday, we woke up to rain. I was really quite disappointed because I had wanted to play some tennis that day. Tyler bought be some new tennis shoes and I was really anxious to play in them to see if they improved my game. Things started looking better as the day went on ... the rain cleared up, the sun was shining and the courts were finally dry! We went and played, and the new shoes definitely helped. Once we got home though, it was time to cook.

I'm so lucky to have a husband who is willing to help me in the kitchen and who will also eat pretty much anything I put in front of him. I knew that even if this mac & cheese didn't turn out, he would tell me it tasted good and would finish his portion (and maybe even plus some)!

So we started cooking. Tyler did such a good job with the broccoli (putting it in the microwave is a really difficult job) and with the macaroni! The part I'm really grateful for is is ability to take really good pictures, especially of me.

This is why I try to avoid exercising ... see how bright red my face is? The bad thing is, this picture doesn't even show off how red it usually gets after a good workout. Lucky me. Anyway, back to cooking. After melting the butter, whisking in the flour, milk, and cheese, it was time to combine everything!

I'll be honest, I didn't really taste anything at first. That is probably because I had a stuffy nose and couldn't smell much either. Who knows. One thing is for sure, it is a really bad idea to put Parmesan cheese on this stuff. That makes it taste like stinky feet smell. Good thing I only did that on a little bit of mine. Anyway, I know you are all anxious to see the final product, so here you go. It looks quite lovely!

We had quite a few leftovers, so for Sunday dinner we breaded some chicken with Italian seasoned breadcrumbs, and voila! A delicious, easy dinner! By the way, it tasted MUCH better with the chicken to go with it.

If any of you want the recipe, you can click here, or the link that I have at the top of the post. I think it was a success. If there are any recipes you want me to try and post about, let me know. I'm always game for a little bit of adventure!

T.G.I.F.

I am so happy it is Friday! This has been a super long week. Today has been a really long day too though. I've been working since 10:30 this morning. Ugh. Don't get me wrong, it's a fabulous job, but really? Sitting in a computer lab for that long without being able to do homework tends to get a little bit boring and lasts forever.

As for the weekend, we might play some tennis; thank goodness for good weather! I think we're probably just going to take it easy though. Watch some Prison Break. This is the life!

What are your plans for the weekend?

P.S. There was an awards banquet for the JCOM students last night. I may or may not have won an award. If you want to know if I won (and what I won) you will have to convince Tyler to blog about it.

Have a great weekend everybody!

Yucky Weather...

Dear Weather,

I am pleased to inform you that it is now APRIL!! That means you can stop with all of this snow-crap, and give us some good weather! I would really appreciate it if outside didn't look like this:

I would really love to be able to use the new tennis shoes my wonderful husband just got for me.

Many thanks,

A very disappointed Katie

(We can be friends again if you send some sunshine and warm weather our way.)

Really?

I feel like my corporate finance class is a joke. It doesn't matter that I have never missed a class, and it will never matter how much I read the book ... I now know that I will never understand this class. It is super frustrating that there are only four weeks left in the semester and I don't know anything more about corporate finance than I did before the semester started. You know it's an awesome class when you can't even figure out how to use the calculator. Life is awesome.

Now to look on the bright side! Tomorrow is Friday, it's supposed to be awesome weather, so that means we'll play some tennis! I'm so excited! I have been wanting to go goof around for probably two months now. I think I'm even more excited to play than Tyler is. Maybe it's because my mood improves a ton when the sun starts shining and it starts to get warm outside.

By the way, I do realize that there are too many words and not enough pictures in my posts lately. I'm working on it.

I know that I'm excited for the weekend, what are your plans?

The Pumpkin Smash!

We didn't actually get to smash pumpkins ... last weekend Tyler had the opportunity to play in a tennis tournament up here in Logan that was called the Pumpkin Smash! It was really fun to watch him smash his first and second opponents, but the third match had all of us a little worried ... it was a very intense match and we weren't sure if either of the players were going to last through three sets.

This last weekend was way awesome because we got to see a lot of family, and we made S'mores Ice Cream again (it just doesn't last long enough)! On Friday my parents came up to watch Tyler play, and on Saturday Tyler's parents and Kevin came up!

Tyler thinks I'm retarded for making him take a picture with his trophy... what can I say? I just want to brag about him!

I definitely think that we got our money's worth out of that match! Tyler got a t-shirt just for entering, AND he got that super cool trophy! Good job Tyler!

Some more fun things that have happened recently ... the movie How to Train Your Dragon finally came out on DVD! I think that is one of our absolute favorite movies of all time! If you haven't seen it, you must do so ASAP! I probably love this movie way too much, but that's alright!

One of our new favorite things to do on Sundays is to have movie marathons and just be kind of, well, lazy! A few Sundays ago we watched Pirates of the Caribbean 1, 2, and 3. They were all on TV. Then the other night Harry Potter 1&2 were on (it wasn't Sunday, but I was doing some homework while I was watching it, so I thought it was ok.) The TV didn't really have any good movies on, so Tyler watched Gladiator while I worked on more homework, but we decided to put in The Proposal as our last movie! Do you have any good movie suggestions?

I think that's about it as far as the last week or so goes ... this weekend we have a Halloween Party to go to! There are costumes involved, AND pumpkin carving. I'll be sure to take some pictures and post them! Have a great week everybody!
